The Cup

This exceptional micro-lot showcases the vibrant potential of high-altitude Honduran specialty coffee. Crafted from the prized, large-bean Yellow Pacamara variety and finished with a meticulously executed Honey process, this cup delivers a luxurious balance of rich, dark-sugar warmth and crisp, tangy fruit clarity. Expect smooth, velvety toffee upfront, giving way to notes of fresh green grape and mellow dried apple with a bright, clean, lingering sweetness.

The Producer & Farm

Grown in the community of San José within the Guajiquiro municipality of La Paz, this coffee comes to us from producer Hever Hernán Suazo (Hernan Avila) at Finca Las Moras.

Perched at a towering 1,860 meters above sea level, the cool mountain temperatures allow the coffee cherries to ripen slowly, concentrating complex sugars inside the seed. Hever’s dedication goes far beyond the harvest—he prioritizes hiring workers directly from within the San José community year-round for pruning, fertilization, and picking. His farm plays a vital role in supporting local families with daily healthcare, education, and nutrition needs.

Variety & Processing

  • The Variety: Pacamara—a celebrated hybrid of Pacas and Maragogype known for its unusually large bean size and aromatic, complex cup profile of rich sweetness and lively fruit notes.

  • The Process: Honey Process—a hybrid processing method where the outer cherry skin is removed, but the sweet sticky pulp (mucilage) is left intact around the parchment while drying. This allows natural fruit sugars to absorb directly into the bean as it dries, elevating the traditional rich, nutty Honduran profile with luscious fruit sweetness and refined texture
